Yacon

Yacon (Smallanthus sonchifolius)

It is a plant native to the Andes of Peru, its roots are characterized by their crunchy texture and sweet flavor that store good nutrients for health. It is recommended for diabetics.

Yacon has high percentages mainly of fructooligosaccharides (FOS) and inulin (both considered prebiotics). FOS are short-chain sugars that are not digested in the digestive tract and reach the colon without changing its structure. There they are digested by the bacterial microflora that produces fermentation and the growth of "protective" bacteria called bifidobacteria and lactobacilli. The association of inulin and FOS provides a protective effect against colitis.

FOS has several beneficial properties, including the sweetening power provided by inulin, also free of calories, and has a high concentration of protein.

In addition, FOS has significant beneficial physiological effects, such as reducing the risk of colon and rectal cancer. It lowers levels of cholesterol, triglycerides, and phospholipids in the blood, promotes a better immune system response, improves resistance to infections and allergies, enhances the absorption of calcium and magnesium minerals, and the absorption of magnesium leads to a decreased risk of colon and rectal cancer. The absorption of calcium promotes good bone health and strength.
