ARRACACHA (Arracacia xanthorrhiza)
The arracacha is one of the oldest crops of Peru, cultivated in Andean regions, a superfood of the Incas. It is highly prized for its pleasant taste and high protein value, high content of , vitamin A, niacin, ascorbic acid and phosphorus. It is easily digestible and therefore becomes a complete food for children and adults.
